Raw Vegan Chocolate Pudding
In a blender, mix until smooth:
1 avocado, seeded, peeled and cut into chunks 1 banana, peeled and cut into chunks 1 cup unsweetened soy, almond, hemp or other alternative milk 1/4 cup raw cocoa powder 2 Tbsp. agave nectar (more or less to taste) 2 tsp. lemon juice 1/4 cup shredded unsweetened coconut (optional)
Divide into 4 serving bowls and refrigerate until set, about 1 hour.
**Note: This recipe is very smooth and tasty, with a strong banana flavor. The bananas and the agave add a lot of sweetness, so these ingredients may have to be adjusted for your own taste. Enjoy!
