Thai Iced Tea5 cups water 5 whole Chinese star anise flowers 8 teabags (black tea, or Rooibos if you prefer a decaf version) 3/4 cup sweetened condensed milk Boil the water and star anise. When water comes to a boil, remove from heat and add the tea bags. Allow to steep for one hour. When the tea has cooled and fully steeped, remove the star anise and tea bags. Whisk in the sweetened condensed milk. Transfer the Thai tea to a pitcher or bottle to store it in the refrigerator. Chill for at least one hour before serving. Serve plain or over ice. Garnish with a sprig of mint. Options:Make it vegan by using sugar and coconut milk instead of sweetened condensed milk. Use a variety of spices instead of or in addition to the star anise. Cardamom, cinnamon stick, cloves or any spice can be used for additional flavor. (Although, this may turn it into more of a Chai than a Thai...lol) ;D Be sure to strain the tea well before chilling...you don't want woody chunks in your tea!
