VEGETARIAN LASAGNA
Saute 1/2 cup chopped onion until soft in 1 tablespoon of oil. Add: 2 c. sliced fresh mushrooms Saute a few more minutes until crisp-tender. Add: 1 can (6 oz.) tomato paste 1 jar (15 oz.) tomato sauce 1 1/2 tsp. oregano Put mixture aside. Have ready: 2 pkg. spinach, drained (defrost ahead of time or cook according to directions on pkg.) 1 (16 oz.) container cottage cheese 1 lb. Monterey Jack cheese, sliced Layer 5 noodles on greased 13 x 9 x 2 inch pan. Then 1/2 of cottage cheese, 1/2 of spinach, 1/2 of sauce mixture and 1/3 of cheese slices. Repeat, starting noodles, then cottage cheese, spinach, sauce mixture. Top with 2/3 of sliced Monterey Jack, finish with an even sprinkle of 1/4 cup Parmesan cheese and a touch of oregano on top. Bake at 350 degrees for 30 minutes.

Hi mikilangela,
I'm wondering if you have any idea what the Australian equivalent of Monterey Jack cheese is? If not, could you describe what it tastes like so I can work out what to use in it's place please?
