1 quart plus chicken stock, fat skimmed off top 1/2 pound potatoes. peeled and sliced 1/2 pound carrots, peeled and sliced 1 onion, sliced 1 clove garlic, crushed 1 cup frozen/canned corn kernels 5 radishes, washed and thinly sliced 2 teaspoons olive oil salt and pepper 1/2 cup of your favorite croutons Combine first three ingredients in a heavy saucepan over medium high heat. Season with salt and pepper to taste. Bring to a boil. Reduce heat to medium low. Cover saucepan and simmer 10-15 mins or until potatoes are tender. Meanwhile, in another small frying pan combine olive oil with onion, radishes, celery and garlic. Cook over medium high heat until onion is tender but not soggy. Add to the potato mixture, along with the corn about 10 minutes into the cooking time. remove from heat. Serve with croutons. This recipe does not call for meat, but you can easily add one pound of stew meat to the onion, radish, celery, and garlic mixture and cook it at that time. With or without meat it is a good easy stew for those cold nights that you need to warmed from the inside out. Enjoy SeaGlass

That sounds wonderful. ;D ;D ;D.....I will try the meatless version.. I have done something like this before ;D and it has come out pretty good ;D

Glad you got your smilies back ;D When I first tried this recipe I thought that the radishes might be overpowering, but they aren't at all. Hope you enjoy it, and please let me know what you think of it if you try it
