Ingredients
Two pounds of potatoes Half a pound of plain flour Half a pound of sugar Tspoon of salt Tspoon of mixed spice Tspoon of vanilla
Currants and Raisins are optional
Method
Oven to 200 degrees Peel sweet potatoes and grate finely Into a bowl add potatoes, flour and sugar, salt,spice, vanilla and fruit.
Mix thoroughly with water to make a pourable but NOT runny mix.
Grease an 8 inch cake tin
Bake for one and a half hours until brown and crusty.
