3 cups flour 1 teaspoon salt 1 and 1/4 cup shortening
1 egg, well beaten 1 tablespoon vinegar 4 tablespoons cold water
Sift flour with salt. Add the shortening and cut in with pastry blender until coarse crumbs form. In a sperate bowl combine egg, vinegar and water. Drizzle over flour mixture. Mix lightly until the flour is moistened and holds together in a ball. Divide into four pieces. Makes two double or four single crust pies.
The secret is to roll it out between a pieces of wax paper or plastic wrap, that way you don't have to add any more flour to your rolling pin making the crust moist. I swear the only time it has failed me is when I haven't followed the directions ;D

I love your idea of rolling between waxed paper! I will try it.
