I found this in a recipe book called "Easy Cooking for One or Two"........honest ;D ;D I think most people already know how to do this.............but just in case...........here it is ;D ;D ;D It's an old book so you'll have to excuse the temperatures and measurements ;D ;D Oven temperature: 400 oF-425 oF, gas mark 6-7 Cooking time: 40 minutes to 1 hour INGREDIENTS even-sized, unblemished potatoes a little margarine or butter METHOD 1. Choose one medium-sized (4-6oz) potato per person. 2. Scrub well and dry. 3. Prick all over, through the skin, with a fork. 4. Rub the skin with butter or margarine, using greaseproof paper or the wrapping paper from the fat to avoid messy handling. This makes the skin delicious to eat. 5. Place on a baking tray or direct on the oven shelf, and bake at 400-425 oF, gas mark 6-7 for 40 minutes to 1 hour, according to size. When ready, they feel soft if squeezed gently with a cloth. 6. Cut lengthwise in halves and mash in plenty of butter and a little salt. love stef
