Sweet Potato Salad with Apple and Lime
1 pound sweet potato, scrubbed and cubed Pinch of sea salt 1/4 cup raw pumpkin seeds 1 large apple, seeded and cubed Handful of cilantro, chopped Juice and zest of 1 lime 2 tablespoons olive oil 2 teaspoons agave nectar Sea salt to taste 1/2 avocado, cubed
Boil sweet potatoes with a pinch of sea salt till tender, but not mushy. Drain in colander. Toast pumpkin seeds in a dry skillet over a medium flame. Stir constantly and they will begin to pop around when done.
Place in medium bowl. Add apple, corn, and cilantro with wet ingredients in bowl. Combine all ingredients, stir well and add sea salt to taste.
Stir in avocado and serve.
